Server owners usually wait a week or two after a release before jumping, because plugins and mods need to catch up first. The listings here have made the jump, which normally means a stable plugin set, an updated anti-cheat and a world that generates the newest terrain past the old border.
If your client is still on an older release, open the launcher and switch your installation to 26.3 before copying an IP. A handful of these servers run protocol bridges and will let an older client in, but any world built around new blocks will look wrong until you match versions.

Do I need to update my launcher to play on 26.3 servers?
In most cases yes. Create or select a 26.3 installation in the launcher before joining. Servers running a protocol bridge will accept older clients, but new blocks and items will not render correctly.
Will my old world or base still exist after a server updates?
Usually yes. Owners normally keep the same world and only new chunks generate with the updated terrain, which is why you sometimes see a visible seam at the old border.
